The Off peg column shows how far a stablecoin's price sits from its target rate. It is shown only for stablecoins pegged to the US dollar. There the target is 1.00 US dollar, and the distance follows directly from the price.
For any other peg the price is also stated in US dollars, but the target is not. A euro stablecoin at 1.16 US dollars may be exactly on target or well off it, depending on where the exchange rate stands. Telling the two apart would require an exchange rate that none of the data sources in use provides. Rather than estimate, the column stays empty.
The peg VAR has no off peg figure for a different reason: it denotes not a fixed rate but a freely floating target value.
The market capitalisation is unaffected. It is stated in US dollars for every peg, including stablecoins denominated in another currency.
